Standard kitchen tools of the late 1980s were designed around an implicit average user: hard, thin, metal handles that assumed a firm, pain-free grip. For the roughly 20 million Americans with arthritis at the time, and for many others — children, people with weaker hands, anyone using a knife for hours in a professional kitchen — that assumption made ordinary peelers, can openers and knives painful or impossible to use for extended periods. The standard industry response to that gap, when there was one at all, was a separate 'adaptive' or 'assistive' product line: chunkier, medicalized, sold in a different aisle to a narrower market, priced and marketed as a niche accommodation rather than a better tool.

Sam Farber started from a single, specific frustration: his wife Betsy, who had arthritis, struggled with a standard vegetable peeler on vacation. Rather than search for an existing adaptive-tools product, Farber worked with the design firm Smart Design to build one peeler, not two — designing directly against the hardest case (a hand with limited grip strength and dexterity) rather than against the average user, on the bet that a tool comfortable for the hardest case would be comfortable for everyone else too.

Good Grips became a mainstream retail success rather than a niche accessibility product — OXO grew to over 1,000 products across kitchen, cleaning and storage categories, and the company's annual sales exceeded $100 million by the time Helen of Troy acquired OXO International for $273 million in 2004; the original peeler was later ranked 6th among the 100 most important designs in history by Fortune and the IIT Institute of Design.

where it breaks

It depends on the extreme-case user's needs actually generalizing to the broader population in the same direction -- an accommodation that trades off against what the average user values (speed, precision, a different pressure profile) doesn't get the same free lunch, and some accessibility needs are genuinely in tension with mainstream preferences rather than compatible with them. It also requires a category where 'better for everyone' can be sold as a premium mainstream product rather than being coded as medical or niche by the market regardless of the actual design -- a category with a strong existing 'adaptive equipment' stigma can undercut the strategy even when the product itself is objectively superior.
