Maersk's StarRipe ripens bananas inside the shipping container

Bananas are climacteric: once picked they keep ripening, so shippers were trapped by a clock. Fruit arrived too ripe, or port ripening rooms added handling and cost.
Maersk's StarCare controlled-atmosphere container holds temperature and humidity while lowering oxygen and raising carbon dioxide, which slows respiration and the fruit's response to ethylene.
StarRipe builds on that to give controlled ripening on command, so a shipper loads green fruit, tracks it in real time and reaches the exact colour stage when it reaches the customer.
Maersk says moving ripening into the container cuts ripening-related cost by up to 30% and removes some of the need to build, power and stock a stationary ripening room.
