Australia had cheap beef and a rich market far away; McIlwraith McEacharn fitted a compressor so frozen carcasses, not live cattle, made the voyage.

Australia and New Zealand had abundant, cheap meat but little local demand, while industrial Britain had demand and high prices. The obvious way to move the product was to ship live cattle, but animals needed feed, water and space, lost weight and value, and only a few could travel at once.
An earlier attempt at frozen shipment failed when cold brine pipes inside the chartered ship Northam leaked before it left harbour, ending the experiment and ruining its backer. The lesson was that the cold equipment had to work reliably at sea.
On December 6, 1879, the steamer Strathleven left Melbourne with frozen beef and mutton, fitted with compression refrigeration. McIlwraith McEacharn, founded by two Scottish sea captains, pioneered the trade, and the first successful refrigerated shipment of frozen beef, lamb and butter reached Britain.
The voyage proved that meat could cross the equator frozen and arrive saleable. That opened a two-way trade in which cheap southern-hemisphere protein paid for the goods and skills of the north.

The Strathleven run became the start of a frozen-meat export industry that reshaped farming in Australia, New Zealand and South America and gave British consumers cheap distant protein. Refrigerated ships grew into a global cold chain, and the practice of producing in a cheap place and selling in a premium one became standard for food trade.
