Fresherized made preservative-free guacamole sterilized by pressure, not heat

High-pressure processing killed the bugs in guacamole without cooking it, so fresh guacamole could ship in refrigerated form for months.

Guacamole is fresh and made from avocado, but avocado turns brown and spoils within days, and heat pasteurization would cook and brown it. So there seemed to be no way to ship a fresh, natural, additive-free guacamole far from the source.

HPP, a non-thermal pasteurization technique, presses the already-packed guacamole under very high water pressure, inactivating bacteria and enzymes while leaving flavor and texture intact. Avomex, now Fresherized Foods, was the pioneer in applying HPP to avocado products from 1997.

That extended shelf life let HPP guacamole be sold refrigerated across long distances without preservatives, turning it into a global consumer snack and making Fresherized Foods the largest high-pressure avocado processor in the world.

HPP moved beyond guacamole into dips, salsa, juices and ready-to-eat meats, and Fresherized Foods set quality standards that other avocado processors, including a wave of companies in Michoacán, Mexico, adopted. By the 2020s more than 30 companies in 11 countries were marketing HPP guacamole or avocado pulp.
