Salinas, in 1948, vacuum-cooled lettuce by boiling its own water in 30 minutes

Vacuum cooling pulled field heat out of lettuce in about 30 minutes by evaporating its own water, instead of packing it with ice.

Iceberg lettuce grown in California's Salinas Valley had to be shipped east, but it left the field warm and spoiled in transit. The standard fix was to pack the crop around ice, which was heavy, laborious and slow at pulling heat out of the dense heads.

In 1948 the first commercial vacuum cooler was built at Salinas: a steel tank holding roughly half a railcar of lettuce, with a steam ejector vacuum pump and a condenser. As the pressure dropped, a little of the water in the leaves boiled off, and evaporation stripped out the field heat in about 30 minutes.

The crop arrived cold, stayed cold without a bed of ice, and the shipping weight fell because there was no ice to haul and no melt water. By the mid-1950s most Salinas lettuce was vacuum cooled.

Vacuum cooling became standard for leafy greens and other high-surface-area produce and spread around the world. It cut lettuce packing and shipping costs and let the crop travel long distances at a low, stable temperature, which helped make California's fresh-produce industry a national supplier.
