Before 1858, home food preservation depended on wax, oil, or cork, none of which reliably kept air out, so jars spoiled; canning was messy and unreliable for a household.
John Landis Mason's idea was to mold screw threads into the top of a glass jar and use a metal cap that threaded down onto them. He patented it as an improvement in screw-neck bottles, receiving US patent 22,186 on November 30, 1858.
The seal worked because the canner packed the jar with hot food, closed the lid, and let it cool. As the contents shrank, the resulting vacuum pulled the lid down over a rubber ring, forming an airtight and watertight seal. The date of the patent, stamped on the face of millions of jars, became the brand.
That single reusable jar let ordinary households preserve fruit and vegetables year-round; it was the anchor of the home-canning movement and, later, a design symbol for glass packaging.
