James Harrison's 1856 ice machine launched mechanical refrigeration

A Scottish-Australian journalist built the first practical vapor-compression ice machine, patented in 1856, and gave brewers cold they could make on demand.

The solution

James Harrison arrived in Australia as a printer in 1837 and ended up owning the Geelong Advertiser. In the early 1850s he began experimenting with mechanical refrigeration on the banks of the Barwon River, building his first ice-making machine in 1851 and a commercial version in 1854.

His system used ether vapour: a compressor forced the gas through a condenser where it liquefied, then the liquid circulated through coils and vaporized, pulling heat out of the brine and freezing water. His 1856 London patents covered both process and apparatus, and a machine with a 5-metre flywheel produced 3,000 kg of ice a day.

Commissioned by a brewery to cool beer in 1856, Harrison's system was quickly adopted across the brewing industry and then by meat-packing factories — the first practical vapor-compression refrigeration in commercial use.
