Apple growers seal fruit in low oxygen and keep it crisp for months.

An apple does not stop after it is picked; it keeps breathing, and that respiration costs it firmness, colour and flavour. Ordinary refrigerated storage cooled the fruit but could not stop the slow ageing.
Controlled atmosphere storage, pioneered in the US by Dr. Robert Smock at Cornell from the 1930s, controls the atmosphere as well as the temperature. Apples are sealed at around two percent oxygen, with humidity, nitrogen and carbon dioxide carefully set.
With so little oxygen the apple breathes far more slowly, so it ripens slowly and stays firm and crisp for months. Controlled-atmosphere storage became cheaper and better as oxygen levels could be reached in a few hours.
Growers and co-operatives shared CA rooms to make the investment work, letting them sell fruit long after harvest and keeping income flowing through the winter.
