Cryovac's vacuum bag turned beef from carcasses into boxes and remade meat shipping
W.R. Grace's Cryovac bag sealed meat without air, so packers shipped boxed subprimals instead of carcasses — less waste, longer shelf life, cheaper freight.

The solution
Before boxed beef, packers shipped whole carcasses and forequarters in refrigerated rail cars and trucks, and butchers near each city cut them into retail pieces. Spoilage, shrink and skilled labor were priced into every pound.
Cryovac, a W.R. Grace division whose name means 'cryogenic vacuum', sealed fresh meat in shrinkable barrier bags that removed oxygen and slowed decay. In the 1960s Iowa Beef Processors paired the bags with its 7-box CattlePak system, cutting carcasses into subprimals at the plant and shipping vacuum-packed boxes nationwide.
The result was a 'boxed beef revolution': longer shelf life, less waste and cheaper transport — no fat and bone shipped, no hanging rails needed. Early adopters of boxed beef became today's major beef companies.
Why it worked
- Removing oxygen stops the main spoilage driver, stretching product life from days to weeks.
- Subprimals in boxes cut shipped weight and let ordinary trucks replace special reefer assets.
- Central fabrication means retail no longer needs skilled butchers at every destination.
- Standard boxes let each customer buy exactly the cuts it uses.
What can be applied
A packaging fix can change the whole network: once the product stops spoiling, distribution shifts from special-purpose assets like reefer cars and local butchers to generic boxes and trucks.
Aftermath
Boxed beef became the dominant way fresh meat moves in North America. Cryovac's shrink bags and rotary vacuum systems became standard equipment in meat processing, and Sealed Air later brought the brand into its global packaging portfolio.
