Gail Borden's 1856 vacuum-pan patent made milk shippable without refrigeration

Borden condensed milk under vacuum so it survived long trips unrefrigerated; the 1856 patent and Civil War rations turned it into a dairy industry.

Returning from England in 1851, Gail Borden watched children die aboard ship for lack of safe milk. Others had tried boiling milk in open kettles; it always burned, discoloured or soured.

Borden's patent of August 19, 1856 (U.S. 15,553, 'Improvement in Concentration of Milk') used a vacuum pan to evaporate about three-quarters of the water at low temperature, condensing milk without scalding; sealed in cans, it stayed pure without refrigeration.

After two false starts, his Wassaic, New York factory succeeded; the Civil War made condensed milk a standard field ration and demand outran production.

The Smithsonian credits the invention with the first milk that could be 'kept pure and storable without benefit of refrigeration' and 'distributed over great distances' — the cold chain's missing first link.
