Champagne's signature bubbles come from a second fermentation that happens inside the sealed bottle, but that fermentation leaves behind dead yeast sediment that clouds the wine — a byproduct baked into the very process that makes champagne champagne. Removing that sediment without losing the carbonation or wasting most of the bottle's contents was, before 1816, essentially unsolved: methods that existed either destroyed the wine's effervescence, wasted significant product in the removal process, or left visible cloudiness that made the champagne look unfinished and unsellable at the standard of clarity buyers expected.

Barbe-Nicole Ponsardin, who had taken over the Clicquot champagne house after her husband's death, didn't try to change the fermentation process itself — she attacked how the sediment could be moved rather than how it was produced. She had a hole drilled into her own kitchen table, sized to hold bottles neck-down at an angle, and had cellar staff give each bottle a small rotation daily over several weeks, gradually walking the sediment down the angled bottle into the neck, where it collected in a tight, removable plug rather than clouding the wine.

Cellar master Antoine Müller, working under Ponsardin's direction, formalized the kitchen-table prototype into the A-shaped 'pupitre' (riddling rack), where each bottle could be systematically rotated and progressively tilted to vertical over weeks, until the sediment settled entirely in the neck and could be removed in one clean disgorgement (later refined further by freezing the neck and popping out the sediment as a solid plug under the bottle's own internal pressure) — a physical, mechanical solution to a chemistry-created problem, rather than a change to the fermentation process itself.

Riddling (remuage) became a defining technical process of méthode champenoise, allowing Champagne producers to reliably deliver clear, sediment-free sparkling wine at commercial scale; Veuve Clicquot kept the technique as a closely guarded trade secret for years before it spread across the champagne industry, and — though now often automated by machines called gyropalettes — the same physical principle of angled, incremental bottle rotation remains standard practice across most champagne and traditional-method sparkling wine production more than two centuries later.
