Ocean Spray turned the pulp left over from pressing cranberry juice into Craisins
the problem
Ocean Spray's juice line left tons of acidic pomace fit only for feed, and drying fruit needed slow, costly dewatering.

Ocean Spray was built as a farmer cooperative to solve cranberry oversupply, but by the 1990s its own juice business had created a second version of the same problem: pressing berries for juice left behind tons of pomace — skins, seeds and pulp — that was fibrous and too acidic to be worth much even as cattle feed, and cost money to haul away. Making a dried-fruit snack from fresh whole cranberries the way raisins or dried apricots are made meant first slowly removing most of the fruit's water before infusing it with sugar, an energy-intensive process in its own right.
The pomace, though, had already had its water and juice pressed out — for free, as a byproduct of an entirely different production line. What looked like exhausted waste to a feed lot was, to a dried-fruit process, a raw material that had already completed the hardest and most expensive step.
what everyone would do
The available path was to keep selling pomace off cheaply as low-grade cattle feed or paying to dispose of it, the same treatment given to nearly every other fruit-processing byproduct, while sourcing dried-fruit snacks from fresh whole berries through the normal, slower dewatering-then-infusion process.
what they saw
Ocean Spray saw dried fruit normally starts by slowly removing the fruit's water before infusing sugar. Cranberry pomace had already lost its water for free, pressed out while making juice.
the move
Ocean Spray's product developers took the leftover pomace and infused it directly with sugar syrup, skipping the dewatering stage a fresh-fruit process would have required, then dried it into a chewy snack; the resulting Craisins launched nationally in 1995, and the company later acquired the Australian firm holding key patents on the infusion process.
why it works
Dewatering is usually the slowest, most energy-intensive stage of making infused dried fruit, and pomace skips it entirely because juice pressing already did that job as an unpriced side effect — so Ocean Spray's raw-material and processing costs for Craisins were a fraction of what a competitor starting from fresh fruit would pay, even before counting that the pomace had been a disposal cost rather than a purchase.
the payoff
Craisins became the fastest-growing product and the number-three brand in the US dried-fruit market within a few years.
where it breaks
It only works when a byproduct has already had the expensive part of your target process done to it incidentally — most waste streams haven't been usefully pre-processed for an unrelated product, they've just been damaged or degraded in ways that don't help. It also needs a masking ingredient, here sugar, that can cover whatever the original process left behind.
what came after
Craisins turned a byproduct stream into one of Ocean Spray's core product lines alongside juice, and the infusion technology behind them was later applied to other fruits, giving the cooperative an ingredient-technology business well beyond cranberries.
