Carver fixed the South's cotton-exhausted soil, then invented 300 peanut byproducts

Cotton was brutally hard on soil, draining nitrogen year after year until yields collapsed across much of the American South. George Washington Carver, director of agriculture at Tuskegee Institute from 1896, pushed struggling Black farmers to rotate cotton with nitrogen-fixing legumes like peanuts and sweet potatoes to rebuild their fields — sound agronomy, but it created a new problem the moment it worked: farmers who rotated in peanuts had no established buyer for them, since cotton was the only crop the region's markets, gins and merchants were built around.
A fix for the soil that left farmers with an unsellable crop wasn't a fix at all — it just moved the crisis from the field to the barn. Carver's real problem was no longer agronomic, it was that an entire regional economy had exactly one crop it knew how to price, buy, and process, and rotating away from it meant losing income unless somebody invented demand for what replaced it.

The available response was to keep promoting crop rotation as sound agronomy and leave the marketing problem to farmers and merchants themselves, the same way most agricultural extension advice stopped at the field's edge.

Carver spent years in his lab developing alternative uses for the surplus peanut and sweet potato crops rotation produced, eventually cataloguing around 300 different products from peanuts alone — including milk, cooking oil, soap, paper, dyes and wood stains — and in 1921 testified before the US Congress Ways and Means Committee, helping secure tariff protection for the domestic peanut industry.

Because the entire regional economy was built around processing and pricing a single crop, no market existed for peanuts no matter how agronomically necessary they were; Carver's hundreds of small industrial and food uses each created a tiny sliver of demand, and in aggregate those slivers gave farmers enough buyers that rotating away from cotton stopped being an economic loss.

Carver's work is credited with helping stabilize the Southern farm economy through the crop-rotation era, and his birthplace became, in 1943, the first US national monument dedicated to a Black American who was not a president.
