The reason so little of that fiber and protein ever reached a human food product wasn't economics or a lack of nutritional value — it was timing. Spent grain is wet, warm right out of the kettle, and begins rotting within about a day, faster than any normal food-industry supply chain could collect, transport and process it before it spoiled. Beating that clock, not finding value in the grain itself, was the actual problem to solve.
