The common story that kaiten sushi began in 1958 belongs to the invention of the conveyor-belt format; Sushiro's actual roots are a 1975 standing sushi shop in Osaka, a first 'Sushi Taro' restaurant in 1984, and the company itself formed in October 1984. The price revolution came in 1995, when the chain switched to flat-price stores — one 100-yen price for every plate — breaking the mid-market kaiten norm.
What made 100 yen sustainable was the plate mix: expensive tuna and salmon offset a deliberate menu of cheap 'safe' items aimed at families — tamago (egg), inari — the things a parent can hand a child without asking the price. Trade press describes the mechanism as the 'ingenious balance' between costly toppings and low-priced menu items that creates the shop-wide feeling of cheapness.
The structure took Sushiro past Kappa Sushi to become Japan's number-one kaiten chain for FY2010-11, in a market of about ¥450B where three chains held over half. Stores grew from 400 (2015) to 642 across all 47 prefectures (2023). The strategy had limits — an owner-era spell of blind discounting had to be reined in — but the flat-price architecture proved durable.
